Introduction
Why We Started to Eat Quinoa – Our Story
We had never heard of quinoa three years ago. When my husband, Bruce, and I started as Team Beachbody Coaches in early 2011, and as we began experiencing positive results from exercise and better nutrition, we wanted to learn more. We also found ourselves talking with other people about good nutrition and a friend recommended we try quinoa.

As sometimes happens in our family, Bruce was the experimenter who tried quinoa at first, but I soon became a fan as well. Now quinoa is one of our staples and is part of either the main dish or a side dish at least a couple times a week.

So What’s the Big Deal About Quinoa?
Quinoa is indeed a very big deal, so much so that the United Nations declared 2013 the International Year of Quinoa. Quinoa seeds are among just a few vegetarian protein sources that include the full range of essential amino acids in the correct proportion humans need in their diet. It’s also low-calorie, a good source of fiber, gluten free, inexpensive, easy to store, easy to prepare, and, because it doesn’t have a strong flavor of its own, it can be mixed with many other ingredients for satisfying breakfasts, salads, and main courses.

The cultivation of quinoa originated in the mountain regions of South America, where the bulk of the world’s quinoa crops are still grown.
