Slow-Cooker Pork Carnitas



In September, we made the 12-hour drive from North Carolina to Louisville, Kentucky to visit our older son and his family and welcome our new granddaughter, Daphne. Of course we arrived famished and we couldn't have been happier with the dinner they provided us, Slow-Cooker Pork Carnitas.

We had never heard of Pork Carnitas before that night, but now we are big fans of this delicious meat dish. Our daughter-in-law gave us the recipe, and we bought a slow-cooker before we left Kentucky so we could make our own batch of Pork Carnitas as soon as we returned home. For just the two of us, we found we could enjoy one meal and have enough leftovers for about five more dinners!

We haven't had a Crock Pot since the early days of our marriage, so it's fun to get back into the world of slow-cooker recipes. They are usually easy to assemble, economical, and taste delicious!
